For this Gyokuro I think the instructions are too hot in temperature and too long in steep time. For me personally, I enjoyed it best at a cooler temperature (70-75 degrees) and for shorter time (30 to 60 seconds). The result is lovely bright yellow-green, thick and creamy, full of umami flavour, warm, grassy, nectar sweet, slight honey, and buttery finish. A very enjoyable green tea. And then...I ate the leaves, with a light drizzle of chili oil mixed with soy sauce and sesame oil, garnished with a sprinkle of toasted sesame seeds. Absolutely exquisite! This Organic Gyokuro Yamashiro was perfect for my meditative tea ceremony and then did double duty as a light lunch! Beautiful, bright green in colour. Fantastic aroma that jump starts your senses. Just as others have noted, only recommended to those with thermometer to brew at proper temperature for a velvety, sweet, smooth, green, energizing brew.
